Easter in Franschoeck Cape Town

What an amazing Week End this has been with amazing people and amazing healthy food and sports…

Any holiday for me is an added excuse to cook healthy snacks and get creative with the decoration!

I started off the festivities with some fun bunny cookies. Gluten free, lactose free and egg free…. I was a little nervous as my peeps are not used to these kind of treats but within a day they were all gone and they seemed to be asking for more…

Decoration is a total must during any holiday! the house comes alive and it sets the tone for a good celebration.

I did not have time to decorate the whole house so opted for details surrounding our Sunday feast.


As for the cookies this was my first attempt at “Carrot Cake” Cupcakes….. I kept in the gluten free theme and I have to say they were a hit!!!

200g Gluten free Self rasing Flour

200g Brown sugar

1tsp Cinnamon

1tsp Ginger

1tsp salt

50g Crushed Pecan/walnuts (optional of course if allergic)

225g Finely Grated Carrots

2 large eggs

60ml Vegetable oil

50g coarsely Grated Apple


220g creme fraiche

1/4 cup confectionary sugar

1tsp of vanilla essance

Bake for 25 mins for cup cakes and 50 mins for cake

(insert cupcakes)
